BEST CHILI RECIPE IN TEXAS

2 lb coarse chili meat
1 med onion
1 clove garlic
1 can (8 oz) whole tomatoes
1 can (8 oz) tomato sauce
16 oz. water
2-alarm chili mix
1 1/2 T. semi sweet chocolate chips

Brown meat, onion and garlic till meat is grayish in color. Drain. Add can of tomatoes, tomato sauce and water. Add 2-alarm chili mix as directed. Cover and simmer for 1 1/2 hours stirring occasionally. Skim off grease if necessary. Mix mesa flour (included in 2-alarm chili mix) with warm water into a thick but flowable mixture and stir into chili. Add semi-sweet chocolate chips. Simmer another 30 minutes. The chips give it "The Kick" that cowboys are always lookin' for.

3 lbs. chili meat, seared
Add 15 oz. can tomato sauce
Add 1 c. water
Add 3 heaping tsp. chili powder or ground chili peppers
Add 1 heaping tsp. organo
Add 1 heaping tsp. cumin powder
Add 2 chopped onions
Add garlic to taste
Add 1 tsp. cayenne pepper
Add 1 level tsp. paprika
Add 1 dz. red peppers
Add 4-5 chili pods
Add 1 tsp. salt

Simmer for 1 hour and fifteen minutes. Add thicking (2 heaping T. flour mixed with water). Simmer an additional 30 minutes.



TEXAS PIONEER JAILHOUSE CHILI

3 lbs. chili meat
8 T. chili powder
3 T. salt
10 cloves garlic, finely chopped
1 T. ground cumin
1 T. red pepper
1 T. sugar
1 T. oregano
3 T. paprika
olive oil

Cook meat in olive oil till it turns grey then add one quart of water. Cover and simmer for two hours. Mix all dry ingredients. Stir into meat mixture and simmer 30 more minutes. Mix 3 T. flour and 6 T. corn meal with cold water to make a thin paste. Stir into chili mixture and cook 15-20 minutes or longer. Stir frequently. This was a good cheap way to feed the prisioners during the pioneer days. All you needed was fresh meat and spices. The jailer would kill a deer and his wife would throw in the spices.
