~ Bull Stew ~
1 mean bad bull with big horns
2 jack rabbits
salt & pepper
Cut bull into small bite-size pieces. This should take about three
weeks. Brown in very large skillet, making enough gravy from the drippins
to cover. Cook over mesquite campfire about two weeks or till tender.
Add salt & pepper to taste. Serves about 101 bull riders. If more bull
riders are expected, the 2 jack rabbits may be added, but do this only
if necessary cause most cowboys dont like hare in their stew. Eat up
and enjoy.

~ Goat Stew ~
1 lb. goat meat, cut up (or you can use 1 med rabbit)
2 1/2 c. dried pinto beans
2 cans tomato sauce
1/2 c. chopped onion
salt, pepper, garlic powder; to taste
Worcestershire sauce
Boil beans in usual manner till done. Boil goat or rabbit till tender.
Combine all ingredients and simmer together for 30 minutes, stirring
often. Serve with cornbread. Feeds 5 hungry people or 8 polite people.

~ Cowboy Beans ~
2 lbs. pinto beans
2 lbs. ham hock
2 onions, chopped
4 T. sugar
2 green chilies
1 can tomato paste
Wash the beans and soak overnight. Drain and place in a dutch oven and
cover with water. Add the remaining ingredients and simmer until
tender. Add salt to taste and water as needed.

DEER CAMP VENISON STEAKS
1 piece venison, 1 lb.
salt, pepper and Tabasco
1 piece lumber, 1" by 12" by 24"
Campfire- Mesquite wood only
Nail venison to wood plank. Season well with salt, pepper and Tabasco.
Prop up next to campfire at 60 degrees angle. Cook for aprox. 2 hours.
Throw away venison and eat the board.

Armadillo Stew
1 armadillo; shelled, cleaned and cut into chunks
1 pound dried pinto beans, cleaned and soaked
1 large onion, chopped
garlic, chili powder, cumin, cilentro salt and pepper to taste
Saute meat in oil. Add beans, onion and seasonings to meat. Cover with water. Cook until beans are done. May need to add more water.
Yield: 8 servings.

Chicken Fried Steak
Round steak (1/4 pound of raw meat per person)
salt and pepper to taste
2 cups milk
1 egg
2 cups flour with 1 tsp. salt and pepper added to it
Use Coke bottle bottom to tenderize meat with and to hack salt and pepper into meat. Take milk in a bowl and beat egg in it. Dip steak in milk and egg mixture then flour until well coated., Fry over medium high heat in about 1/2 inch grease until batter is golden brown.
